Dolce voglia di carnevale: limoncelli!

Carnevale è alle porte e anche se ho archiviato da un po’ le maschere,

la voglia di un dolcetto tipico di questo periodo è venuta anche alla principessina che è nel mio pancione! E visto che “semel in anno licet insanire”, dopo aver sfogliato mentalmente le varie ricette, chiacchiere, castagnole (per me “turduliji”), tortelli ripieni di ricotta ( alias “chinuliji”)… sono arrivata a quella che più di tutte mi mancava: i limoncelli! Come i vari dolci tradizionali, anche questa ricetta fa capo a mia nonna ed è con lei che li ho sempre preparati. Anzi, pare che io sia l’unica della famiglia ad averli fatti con il suo benestare! Alcuni di voi probabilmente li conosceranno come limoncini o arancini marchigiani, ma la ricetta di mia nonna è calabrese ed in effetti, oltre a variare leggermente il nome, non è del tutto uguale ( per esempio, noi non usiamo il Mistrà). Sapete che mi piacciono le sfide ed anche questa volta l’ho colta al volo: eliminati latte, burro ed uova dagli ingredienti mi sono messa all’opera!Mio marito, che ha assaggiato entrambe le versioni, ha detto (ma non ditelo a mia nonna) che la mia è molto più buona (vi garantisco che, anche se non si direbbe viste le circostanze, è molto imparziale)! Se non vi fidate, cosa aspettate a farli? Buon carnevale a tutti!

Ingredienti per circa 40 limoncelli:

Per la sfoglia:

  • 300 g di farina di tipo 1
  • 160 g di bevanda di soia al naturale a temperatura ambiente
  • 45 g di olio di semi di girasole spremuto a freddo
  • 15 g di lievito di birra

Per la farcia:

  • 125 g di zucchero di canna chiaro e sottile
  • scorza di 2 limoni biologici
  • scorza di 1 arancia biologica

Extra:

  • olio di arachidi per friggere
  • farina di tipo 1 per il piano di lavoro

Preparazione:

In una ciotola versa la farina, aggiungi l’olio ed amalgama uniformemente. Fai sciogliere il lievito nella bevanda a temperatura ambiente (se lo avevi in frigo, scaldalo leggermente per farlo intiepidire). Versa il composto liquido nella ciotola ed incorpora fino ad ottenere un panetto omogeneo. Trasferisciti sul piano di lavoro e continua ad impastare per rendere il panetto liscio. Se risulterà troppo morbido, aggiungi un altro po’ di farina: dovrà avere la consistenza della pasta fatta in casa. Cospargi il piano di lavoro con un velo di farina e stendi la sfoglia con il matterello fino a 1-2 mm di spessore (all’incirca lo spessore per le tagliatelle fatte in casa). Lascia riposare e nel frattempo prepara la farcia: grattugia in un piatto la buccia di limoni ed arancia, aggiungi lo zucchero (se lo hai a grana grossa, frullalo leggermente) ed amalgama mescolando e strofinandolo tra le dita finché la buccia avrà impregnato tutto lo zucchero. Cospargi uniformemente la sfoglia con lo zucchero aromatizzato senza tralasciare i bordi. Parti da un bordo (lato lungo) e inizia ad arrotolare la sfoglia su se stessa, avendo cura di tenerla ben stretta giro dopo giro, fino ad ottenere un unico salsicciotto. Taglialo a fette di circa 1 cm di spessore, sigillale bene pizzicando l’impasto se necessario, e adagia su delle placche rivestite di carta da forno. Lascia lievitare per 30-40 minuti. Scalda l’olio in un tegame con i bordi alti. Friggi i limoncelli velocemente, tenendoli costantemente sott’occhio e rigirandoli, finché si saranno caramellati. Fai asciugare su carta di pane perché sono piuttosto appiccicosi.

Consigli:

  • Tra un turno di frittura e l’altro, rimuovi con la schiumarola i residui di zucchero dall’olio per non farli bruciare;
  • Conserva in un contenitore di vetro ben chiuso.

Carnival is coming and even if I putted away masks many years ago, it remains the willingness to have some typical sweet of this period…and the little princess in my belly is also asking to taste it! And since “semel in anno licet insanire”, after browsing mentally the various recipes … I finally decided to prepare the one I was missing more: the limoncelli! As the various traditional sweets, this recipe is by my grandmother and I has been teached by her to prepare them properly. Indeed, it seems to be the only one in my family to have made them with her approval! Some of you probably know them as Limoncini or Arancini from Marche, but the recipe of my grandmother is from Calabria and in fact, in addition to slightly change the name, it is not quite the same (for example, we do not use the Mistrà a tipical anise based liquor). You know that I like challenges and this time I took it immediatly: eliminated milk, butter and eggs from the ingredients I started work! My husband, who has tasted both versions, said (but do not tell my grandmother) that mine version is much good! If you don’t trust him, what do you expect to make them? Happy Carnival to all!

Ingredients for about 40 “limoncelli”:

For the dough:

  • 300 g of flour type 1
  • 160 g of natural soy milk (room temperature)
  • 45 g of cold-pressed sunflower oil
  • 15 g of fresh yeast

For the filling:

  • 125 g of clear and thin brown sugar
  • zest of 2 organic lemons
  • zest of 1 organic orange

Extra:

  • peanut oil for frying
  • some flour type 1 for the worktop

Preparation:

In a bowl pour the flour, add the oil and let them blend evenly. Melt the yeast in the milk (if you had it in the fridge, warm it slightly). Pour the liquid mixture into the bowl and stir until you have a smooth dough. Let continue to knead the dough on the work surface making it smooth. If it will be too soft, add a little of flour: it should have the consistency of homemade pasta. Sprinkle the work surface with a little of flour and stretch the dough with a rolling pin until 1-2 mm thick (like the thickness for homemade noodles). Prepare the filling: grate in a plate lemon and orange zests, add sugar (if yours is coarse-grained, chop it slightly) and mix rubbing it between your fingers until the zest will have soaked all the sugar. Evenly sprinkle the dough with flavored sugar without forgetting the edges. Let start to roll the dough over itself from one edge, taking care to keep it tight round after round, until making a single sausage. Cut it into slices about 1 cm thick, seal them well by pinching the dough if necessary, and put them on the coated plates of baking paper. Leave to rise for 30-40 minutes. Heat oil in a pan with high sides. Fry quickly the limoncelli, constantly taking care and turning them until they are caramelized. Make them dry on bread paper because they are quite sticky.

Tips:

  • Remove everytime the sugar residues with the skimmer from the oil not to make them burn;
  • Kept them in a tightly closed glass container.
